Cauliflower Crust Pizza

I've been wanting to try this forever, but kept putting off because it looked kinda time consuming, but I could not have been more wrong! In fact it was super simple, I involved the kids and they even ate it! Score for MOM! 

I took two different recipes and then sort of created my own. So here it goes:

Ingredients:

1 Head of Cauliflower
1 Egg
Dried Oregano
Sea Salt
Chopped Garlic
1/4 Cup Marscapone Cheese (for texture)
2 Cups of Sauce
2 Cups of Shredded Mozzarella
A few small tomatoes for topping (optional -- pick your own toppings!)

Directions:

Preheat oven to 375 degree

Break the cauliflower into florets and pulse in a food processor until it looks like rice.

Place cauliflower in a double boiler/steamer and steam for about 4-5 minutes. I actually pushed all the cauliflower to one side because it was clogging up the holes in the steamer and blocking the steam. Once I did this -- we were back in action! If you don't have a double boiler/steamer, you can actually boil the cauliflower in a pot and simply strain it with a fine strainer when it's cooked.

**IMPORTANT STEP:  When you are finished steaming the cauliflower, place it between a few paper towels and squeeze out as much liquid as you can.  This will allow the crust to be crustier! 

In a bowl, combine the cauliflower, egg, dried oregano, salt, chopped garlic and marscapone cheese. 

Spray a baking sheet with olive oil spray or coconut oil spray.  Transfer the mixture to the center of a baking sheet and spread into whatever shape you desire. We went with a Sicilian type crust! 

Bake for 25-30 minutes until golden brown.

Remove from oven, place sauce and desired toppings on the crust and bake for another 10-15 minutes until all cheese is melted!
